It’s pancake day today!
Which is why these delicious gluten-free pancakes are perfect for a healthy breakfast. It’s filled with good proteins, potassium and vitamin b6 among others. Best thing is, you only need two ingredients eggs and banana, that’s it! It’s very simple and easy to make.
Just blend the two ingredients together 1. banana and 2. eggs and put it in a pan. I like to use a little bit of coconut oil to give it a sweeter taste and also to get the benefits of the oil. Top it with you favorite fruit, and some honey for a little sweetness.
If you feel like it, you can also mix the base with some oats or almond flour to give it a thicker texture. Sometimes I do that, but I kinda like it a bit fluffy.
