Coconut porridge bowl with berries and tahini

Lately I have been experimenting with different kinds of ways to make the traditional porridge. I am absolutely crazy about oats, it tastes good it is full of healthy goods and really cheap( I buy them gluten-free as my stomach has a hard time digesting the gluten protein). But sometimes and especially when it’s summer a hot breakfast is not really my first choice. So I discovered the overnight oats, which is leaving the oats in any kind of milk in the fridge overnights. The result is so creamy and delicious and it really absorbs all the tasty flavors of the milk. I like to use coconut or almond milk. You can mix the oats with a spoon of shia seeds as I did, as it is an excellent source of fiber and healthy fats. This breakfast almost tastes like porridge but in a cold version, perfect for those hot summer days! It is a super-fast way to prepare your breakfast too, all you need is your topping and you are ready to go! This morning I used blue and raspberries which are full of antioxidants and vitamins, pumpkin seeds as they are a good source of omega3 and minerals such as magnesium and zinc and also works stabilizing you blood sugar, a little bit of cocoa powder which is highly nutritious and contains antioxidants, minerals and fiber, and it is also said that it boosts endorphins which means it makes us happy beings. Not to forget, I used a bit of tahini for a nutty touch, it is also an amazing source of calcium and very high and vitamin E amongst others and has a 20% complete protein, making it a higher protein source than most nuts. There is so much fiber in each bowl of this, which means that the energy will be released slowly throughout the morning so that you won’t feel hungry for hours.


Half glass of oats

A tablespoon shia seeds

Plenty of coconut milk or any other non-daity milk to cover the oats and shia seeds. Keep in mind that the bowl will absorb much of the milk so don’t be afraid to use a little extra.

A handful of berries

A palmful of pumpkin seeds

A teaspoon raw cocoa powder

A tablespoon tahini
