Exotic garden vitamin c smoothie with coconut, pineapple, and blackberries

Just looking at this smoothie makes my morning better! This smoothie is not only a beautiful one of a kind but also loaded in vitamin C and enzymes. The key ingredients in this blend is pineapple, blackberries, dates, cucumber, shia seeds and coconut milk. Such a refreshing start to your day full of cool, bright and sweet flavors. It makes me think about exotic beaches mixed with idyllic gardens! Pineapple is the base flavor in this smoothie, it is very high in vitamin C and magnesium in which both play key roles in energy production and antioxidant defenses. Blackberry is high in vitamin C, fiber and contain anthocyanin’s which gives the berry its dark color and are an antioxidant enzyme that reduces inflammation. Pineapple actually also contains an enzyme called bromelian, which is not only helpful for our digestion of amino acids( proteins) but also has great anti-inflammatory benefits. Bromelian is not only a great antioxidant and enzyme but has been touted to help with inflammation, muscle relaxation, contraction, pain, cancer prevention, antibiotic absorption and many more.

This smoothie is great if you are looking for a little extra boost of antioxidants or something to help you digestion or even when you feel a little cold or a flu coming up.

Ingredients

One cup pineaple

Half cucumber

One cup blackberries

Two dates

1/2 – 1 cup coconut milk ( Not the super thick and creamy one, but the one you use as an alternative to milk)

2 tablespoon shia seeds

Shredded coconut for topping

Blend all the ingredients together. Add the shia seeds in the end and give it a quick blend to blend it through the rest of the ingredients. Top it with some more blackberries and shredded coconut.
